Description

The holder of this Badge has attended the Gluten-free Cuisine Course held by the School of Italian Cuisine. The teaching programme is held in 4 lessons lasting 3 hours each, on the following subjects: First courses; Main courses; Pizzas and bread; Desserts. Completion of the Gluten-free Cuisine Course allows the student to acquire general skills, competencies and knowledge of gluten-free cuisine, as well as using correct operational techniques and working procedures to avoid contamination.

Badge Criteria

To obtain the Gluten-free Cuisine Course Badge, attendance is required of at least 80% of the total course hours. The courses are held more than once in the same year (4 sessions each in four-monthly periods). The holder of this Badge has demonstrated that he or she possesses and knows how to use the following SKILLS: making specific basic preparations for gluten-free cuisine; using specific work techniques to ensure gluten-free preparations; assessing the quality of products used; and the following SOFT SKILLS: planning work processes, taking account of available time and resources; The holder of this Badge has also successfully acquired KNOWLEDGE relating to: work techniques for making gluten-free preparations; properties of gluten-free products; use of gluten-free products.
